Chia Pudding with Raspberry Coulis

The perfect fix for an afternoon snack with just two ingredients. A great pick me up snack when you are out of sweet treats. Prepare beforehand and enjoy with almond butter or raspberry coulis. Delicious and gut soothing.

INGREDIENTS

2 Tbsp chia seeds

100ml coconut milk

Raspberry coulis

80 fresh or frozen raspberries

1 tsp water

1 1/2 Tbsp lemon juice

Toppings

Almond butter

Coconut shavings

 

INSTRUCTIONS

1. In a small saucepan over medium heat cook the raspberries with a teaspoon of water until jam consistency. Stir in the lemon juice and set aside.

2. Stir the chia seeds and coconut milk in a bowl or mason jar and let it set in the fridge for 3 hours or overnight.

3. Top with the raspberry coulis and almond butter and sprinkle with coconut for extra flavour.
