Homemade Tomato Sauce
The sauce that needs no introduction. The traditional Mediterranean pantry staple to always keep handy for a quick pizza [ADD LINK TO RECIPE], a gluten free pasta [ADD LINK TO RECIPE] or my favourite dish in the world: arroz a la cubana. Easy to make, full of flavour and a perfect add on for any meal.
INGREDIENTS
1 jar of tomato purée (720ml)
1 onion
1 bay leaf
Salt
INSTRUCTIONS
1. Heat the olive oil in a medium pan over medium heat, add the finely chopped onions and sauté until tender. Stir in the tomato purée, bay leaf and salt and bring to a low simmer for 40 minutes or until the sauce has reduced by 2/3 and has a thick consistency.
2. Transfer the sauce to a food processor, remove the bay leaf and blend on high speed until smooth. Serve with pasta, pizza or your choice of veggies.
TIP
Cooking: stir the sauce occasionally with a wooden spatula, particularly towards the end when the sauce becomes thicker and it is easier to burn it.
Storage: in a glass jar in the fridge for a week or in the freezer for up to three months.
