Goji Berry Raw Chocolate
Your unsweet deserved treat. Because you don't need sugar to keep you going. This indulging healthy chocolate recipe will keep your chocolate addiction at bay and a smile on your face. Mix it up with your favourite toppings, the hazelnut goji combo is my all time favourite.
INGREDIENTS
80ml cacao butter (solid)
10ml coconut oil melted
10ml maple syrup
100g cacao powder
Topping
30g hazelnuts (roughly chopped)
30g goji berries (roughly chopped)
INSTRUCTIONS
1. Half fill a small pot with water and bring to a simmer, then reduce to low heat. Set a heat proof bowl with the cacao butter on top and allow to melt stirring gently, ensuring the base of the bowl does not touch the water.
2. Once melted, remove the pot from the stove and stir in the cacao. Mix to combine, followed by the melted coconut oil and maple syrup. Pour straight after into a silicon mould or shallow dish with baking paper and sprinkle with the hazelnuts and goji berries.
3. Rest in the fridge for 1h and enjoy.
TIP
Melting cacao butter: melted cacao butter should resemble melted butter.
Mixing: ensure the bowl with the chocolate mix does not touch the kitchen surface directly, as the contact with a cold surface will solidify the chocolate faster, making it more difficult to pour into the mould.
Storage: keep in the fridge for a week.
