Easy Cauliflower Rice
Your soon to become favourite veggie side. A great alternative to rice to go with your curries and stews when you want to keep your carbs to a minimum and your tastebuds to a max.
INGREDIENTS
1 cauliflower head, washed
A handful of coriander leaves
1 tsp curry powder
1 tsp coconut oil
A pinch of salt
1 lime
INSTRUCTIONS
1. Roughly chop the raw cauliflower and pulse in a food processor until it resembles rice.
2. Heat a large pan with coconut oil over medium heat, add the cauliflower, curry and salt and sauté until tender. Serve with finely chopped coriander leaves and a dash of lime.
TIP
Prep: clean thoroughly and make sure the cauliflower is fully dry to avoid a soggy texture. Discard the leaves. Seasoning: salt, pepper and some spices. Squeeze in some lime juice to remove any bitterness.
Texture: cauliflower rice should be al dente, do not over cook as it will resemble mashed potatoes.
Cooking: stir frying is the fastest method. Alternatively, roasting achieves a great firm texture.
